One-Pan Lemon Chicken & Potatoes

Ingredients

  • 700g Chicken Thighs (Boneless)
  • 500g Baby Potatoes Halved
  • 250g Green Beans Trimmed
  • 3 cloves Garlic crushed
  • 45ml Olive oil
  • 5g (tsp) Dried Oregano or Mixed herbs
  • 1 Lemon Half sliced, Half juiced
  • Salt and Pepper to taste

Instructions

  • Preheat your oven to 200'C. Line a large deep baking tray with a sheet of baking paper
  • Place all of your ingredients into a bowl and mix thoroughly. Seasoning to your liking
  • Spread a single layer onto your baking tray.
  • Roast for 25-30 minutes until potatoes are tender and chicken has an internal temperature of 74'C.
  • Divide up and Enjoy.
